Yellow Gazpacho

Ingredients

SERVINGS: 4-6
  • 1 cup chopped yellow pepper (all pith removed)
  • 1 cup chopped cucumber
  • 5 cups chopped yellow tomato
  • 1 tablespoon chopped shallot
  • 2 tablespoons chopped garlic
  • 1/2 tablespoon Tabasco sauce
  • 3 tablespoons sherry
  • 1/2 slice day-old bread, fried
  • 1 1/2 – 2 teaspoons salt
  • 1/2 – 1 teaspoon sugar
  • 3 tablespoons olive oil
  • for garnish: croutons, cherry tomatoes, celery leaves

Instructions

In a bowl, stir together all ingredients except olive oil and garnishes. Cover and let sit overnight in the refrigerator. Before serving, blend well, incorporating olive slowly. Season to taste. Serve cool; garnish with croutons, halved cherry tomatoes and celery leaves.
