Ingredients
SERVINGS: 4-6
- 1 cup chopped yellow pepper (all pith removed)
- 1 cup chopped cucumber
- 5 cups chopped yellow tomato
- 1 tablespoon chopped shallot
- 2 tablespoons chopped garlic
- 1/2 tablespoon Tabasco sauce
- 3 tablespoons sherry
- 1/2 slice day-old bread, fried
- 1 1/2 – 2 teaspoons salt
- 1/2 – 1 teaspoon sugar
- 3 tablespoons olive oil
- for garnish: croutons, cherry tomatoes, celery leaves
Instructions
In a bowl, stir together all ingredients except olive oil and garnishes. Cover and let sit overnight in the refrigerator. Before serving, blend well, incorporating olive slowly. Season to taste. Serve cool; garnish with croutons, halved cherry tomatoes and celery leaves.
