  • 4 cups pitted Montmorency or other tart cherry (fresh or thawed from frozen)
  • 1 cup sugar
  • 3 tablespoons instant or regular tapioca tiny pinch of salt
  • ⅛ teaspoon almond extract or ½ teaspoon vanilla extract

Preparation

Place cherries into bowl. Mix sugar, tapioca and salt; stir into cherries and add extract. Let stand 20 minutes at room temperature—this allows the tapioca granules to soften and dissolve. Stir again gently before pouring into pie shell.
