A shrub is a tangy and sweet mixture mixed with water or seltzer, making effectively a mature soda. I like a lower ratio of shrub to soda water, but this ratio has been the most popular at all my summer dinner parties. I rarely add gin to this but am alone in my abstinence.

Shrubs also keep for ages because of their acidity and sweetness. I refrigerate just to be safe even though it probably isn’t necessary

Ingredients

  • 1 quart strawberries, cleaned and hulled
  • 1 cup apple cider vinegar
  • ½ cup balsamic vinegar
  • ½ cup maple syrup
  • 1 pinch salt
  • 2 quarts soda water

Preparation

Blend everything but the soda water together until smooth to make a strawberry shrub. When ready to sip, mix the shrub and the soda water. Taste and add more soda water as desired.

If feeling fancy, garnish with a sprig of mint, basil or a handful of fresh strawberries.
