Swiss Chard with Tomato Sauce

This swiss chard with tomato sauce is the perfect accompaniment to the Cretan lamb casserole dish. Make this to serve on top of the dish for the full effect.

Ingredients

  • 1 bunch Swiss chard
  • 1 medium onion, chopped
  • 3 cloves garlic, chopped
  • 1⁄2 cup chopped red tomato
  • 1⁄4 cup virgin olive oil
  • salt and pepper

Instructions

Clean and chop chard into 1-inch pieces. Heat olive oil in a saucepan or medium-sized pot then add onion and Swiss chard. Cook on medium heat on the stovetop for 10 minutes. Add tomatoes, salt and pepper to taste, a small amount of water, and cook until tender, about 10 more minutes.
