Blackened-style cooking involves brushing melted butter onto seasoned fish (Mike uses a salt, pepper and Blackbird Gardens’ dried Thai basil mixture) and dropping it onto a searing-hot cast-iron pan. It can make a lot of smoke, so use ventilation for indoor cooking in a home kitchen. Mike prefers to cook it outside, if possible. If your indoor kitchen lacks adequate ventilation, you can also put your cast-iron pan in the oven and heat oven to 480 degrees. Once preheated, open oven and carefully add the fish to the pan, returning to the oven for about 5 minutes or until just cooked. For each method, remove from heat and allow to sit for several minutes before serving.
