Wild Turkey Milanesa

I don’t like recipes that mask the unique taste of wild game. “Gamey” has become a pejorative term to describe wild game, but it is simply a misused label to describe meat that isn’t fed grain. What you are tasting is minerals in the meat and a life led by survival. This simple recipe is just as easy to cook out in the field as it is at home.

Ingredients

  • 1 fresh boneless turkey breast
  • salt
  • panko breadcrumbs
  • vegetable oil
  • 1 lemon

Preparation

Place turkey breast between 2 (12-inch) sheets of plastic wrap. Using a heavy object like a rock, Mason jar or meat tenderizer, pound the breast thin (about ¼ inch or thinner).

Unwrap the turkey breast, season lightly with salt and coat generously with breadcrumbs.

Heat about ¼ inch of oil in a pan. Fry breast until golden brown on both sides and cooked all the way through. Squeeze freshly cut lemon over the breast.

Enjoy with your favorite spring vegetables.
