This Mexican noodle soup recipe is one of our children’s favorites!

Ingredients

  • 6 Roma tomatoes
  • ½ medium white onion
  • 3 small cloves garlic
  • 2 teaspoons sea salt
  • 4 tablespoons butter
  • 1 cup fideo or other pasta
  • 4 cups water

Preparation

In a blender or food processor, puree tomatoes with water, onion, garlic and salt.

Melt butter in a pot over medium heat. Add pasta to butter, stirring constantly until the pasta becomes golden brown. Stir in pureed tomato mixture and bring to a simmer. Cook until pasta is soft, adding more water and salt if needed.
